Château Mathalin du Hayot is a small-scale property situated in Mazères on a clay soil we produce a fresh and fruity wine.

It is complemented by a 1-hectare plot located in Illats alongside our Sauternes plots and planted with 100% Sémillon, which lends a touch of roundness to our wine.

  • Location: Mazères & Illats
  • Area: 8 hectares
  • Grape varieties: 70% sémillon and 30% sauvignon
  • Average age of vines: 35 years
  • Harvest: hand-picking harvest; 1 to 2 pickings for each plot
  • Vinification: fermentation inside thermo-regulated stainless steel tanks
  • Ageing: in stainless steel tanks for 6 months
