Château Romer du Hayot is situated in the commune of Fargues; it was distinguished by the 1855 Wine Classification as a “Second cru classé”.

  • Area: 9 hectares
  • Grape varieties: 90% sémillon and 10% sauvignon
  • Average age of vines: 35 years
  • Harvest: the hand-picking harvest lasts 5 weeks; the “successive sorting” method means 2 to 4 pickings for each plot.
  • Vinification: traditional fermentation
  • Ageing: 8 to 9 months in barrels
  • Production: 6 000 to 7 000 bottles
