Great subtlety and an unrivaled bouquet

Right in the heart of Sauternais, Château Romer du Hayot has selected different batches from several plots in order to produce “Le 2”.

While respecting the traditions that have contributed to the reputation of Sauternes wines, Le 2 benefits from the most modern techniques of vinification and ageing in barrels for 6-8 months.

  • Location: clay-limestone and gravel soil
  • Grape varieties: 90% sémillon and 10% sauvignon
  • Harvest: hand-picked by successive selections
  • Vinification: traditional fermentation in temperature-controlled stainless steel vats
  • Ageing: In stainless steel vats, then partly in barrels for 6 to 8 months
